Don't laugh! *wink* -but I like Rachael Ray, I admit it..... and I often watch her show in the mornings. :) This recipe for 'Croissant Egg Boats' is from her, and is way easy and quick. I thought it sounded good, so we made it for part of our 'luncheon' at our house after Addie's baby blessing. I've since had a couple of people (including my mom!) who liked it enough that Ive had to give out the recipe a multiple times, so I figured I would just post it on here for you all:

Ingredients:
2 store-bought bakery croissants
8 slices deli ham (**we mixed it up a little and used other meats too, turkey, ham, etc.. whatever you like)
4 slices Swiss cheese (** we mostly used Swiss, but also tried regular cheddar and they were good too!)
2 large plum tomatoes, thinly sliced
4 eggs
Salt and ground black pepper
** The amounts of the ingredients listed here are different from what we did... for example; we just buy a bag or 'package' of croissants and then make it for however many croissants there are... if they're big croissants, then cut them in half and use one half for each serving,... and if they're little we still cut them into halves, but use both pieces and just shape both pieces into the muffin tin together. (you'll shape them into a 'bowl' shape) Just put a slice of tomato, piece of cheese, and an egg in for each one of whatever amount you end up making.
Directions:
Pre-heat oven to 350ºF.
Slice the croissants in half lengthwise. Lay them cut-side up on a baking sheet.
Line 2 pieces of ham into the cavities of each half and top them all with a slice of cheese and a few slices of tomato.
Crack an egg into each “pocket” and sprinkle them with a little salt and pepper.
Bake until the eggs have set, about 15 minutes for a slightly runny yolk. Serve with a side salad for a super simple brunch.
** Note: the eggs will look kind of runny either way, but we still ended up cooking ours a little longer than 15 minutes, so just keep checking until they look 'done' to your preferences! :)
